Protein Pancakes

The whole family will love these freezer-friendly pancakes!

Jump to Recipe

If weekday mornings are usually a little chaotic at your house, these protein pancakes are worth adding to your breakfast routine!

I like to make these in large batches and freeze them so I have an easy breakfast ready to go throughout the week. Just warm them up and breakfast is taken care of!

The best part? My kids have recently started eating them too, which is great… except now I can hardly keep up with making enough to keep the freezer stocked!

They’re an easy way to make breakfast ahead of time without having to cook every single morning. I love having something homemade ready to grab when we’re rushing out the door or just don’t feel like making breakfast from scratch.

Ingredients

  • 1 ½ cups flour

  • ½ cup vanilla protein powder

  • 2 tsp baking powder

  • 2 tsp baking soda

  • Pinch of salt

  • 1 ¼ cups milk

  • ¼ cup plain Greek yogurt

  • 1 egg

  • 2 tsp vanilla

  • 2 Tbsp olive oil

  • 1 Tbsp maple syrup

Directions

  • Combine all dry ingredients together in a large bowl (flour, protein powder, baking powder, baking soda, and salt). Whisk together.
  • In a separate bowl, whisk together the milk, Greek yogurt, egg, vanilla, olive oil, and maple syrup.
  • Add the wet ingredients into the dry ingredients and whisk until just combined, careful not to over mix.
  • Heat a large skillet to medium. Use cooking spray if needed.
  • I like to use a 3 Tbsp cookie scoop to measure mine out so they are all the same.
  • Cook 2-3 minutes on each side.
  • See note below if you are planning to freeze them for later!

Notes

  • If you are planning to freeze them then line a baking sheet with parchment paper and place them in a single layer. Allow them to cool completely and then pop the whole tray into the freezer for 1-2 hours. Remove the tray and place the pancakes in a freezer container or bag and store until you’re ready to enjoy!
